Seriously? I like fish – and especially trout, so why wrap it in bacon? ; ) Now all one needs is a smoker (not the cigar kind).

2 whole rainbow trout (about 1 lb. each), cleaned
2 tbsp. olive oil
Kosher salt and freshly ground black pepper, to taste
6 sprigs tarragon
