Bourbon Ginger Ale Bacon

Wow – This is bacon in the traditional sense. Ofcourse one would substitue the Bourbon for Scotch! ; )



  • 1 lb pork belly (I went with brined, if not you’ll have to add salt)
  • 1 tsp garlic powder
  • 2 tsp mustard powder
  • 10 whole white peppercorns
  • 1 tsp crushed black pepper
  • 2 sprigs fresh rosemary
  • 1 tbsp bourbon molasses mustard (half that amount of molasses or brown sugar would work)
  • ½ oz bourbon
  • 2 oz ginger ale
