Bacon Wrapped Corn on the Cob

Summertime and the living is mostly outside for cooking, especially here in Minnesota. We enjoy those days on the deck and cooking dinner on the grill.

Here is the perfect summer side dish. The original recipe calls for a broiler, but the grill should work just fine. Just be sure the bacon is cooked and the corn is tender.

1.  Heat grill to medium (or broiler if cooking inside)

2.  Combine 1/4 to 1/2 tsp. each of cayenne pepper and coarse salt in a small box.

3.  Shuck four ears of corn and cut in half crosswise.

4.  Sprinkle the corn with the cayenne/salt mixture.

5.  Wrap each piece of corn with a 1/2 slice bacon and secure the ends with a toothpick.

6.  If broiling, use a rimmed baking sheet and turn frequently until bacon is crisp and corn is tender – about 9 to 10 minutes.

If grilling, wrap the corn in aluminum foil and place on the grill and cook until corn is tender – about 15 – 20 minutes. Remove from foil and place back on grill to crisp the bacon.

Even though you are cutting the corn cobs in half, I would suggest this probably only serves 4 because it might be pretty hard to just eat one half :-)
