Serve this lovely confit over pasta, or chopped and on top of crostini. Heck, I think I might just eat it straight out of a jar!
- 3 pounds tomatoes
- 6 large cloves garlic
- 12 sprigs thyme
- Freshly ground black pepper
- 1 pound sliced bacon
