Colorado Bacon Chile


2 lb beef (stew meat cut into bite sized pieces)
1 tsp salt (seasoning)
12 tsp black pepper (freshly ground black pepper plus more for seasoning)
2 tbsp olive oil
1 red onion (finely diced)
12 oz chiles (diced green)
14 cup bacon (crumbled)
1 cup tomato puree
1 tbsp salt (free mexican seasoning)
12 tsp chili powder
12 cup stock
1 scallion (sliced)
