Hammerstone’s Bourbon & Bacon Grilled Cheese

I’ll be packing this for lunch today… the three tablespoons of bourbon cooks away – doesn’t it? ; )

Ingredients 

1/3 cup mayonnaise
3 tablespoons medium pepper sauce
3 tablespoons bourbon
1 teaspoon minced garlic
1 teaspoon finely chopped parsley
Salt and freshly ground pepper
1 tablespoon vegetable oil
1 medium onion, thinly sliced
2 teaspoons cider vinegar
12 slices of bacon
2 tablespoons unsalted butter, softened
8 slices of white sandwich bread
1/2 pound sharp cheddar, cut into 4 slices
3 ounces cheddar cheese curds (1 cup)
