Bacon Double Cheese Burger Bites

I can’t really think of a more delicious snack. The perfect bit-sized poppers, loaded with the good stuff. Bacon, beef and cheese. I’d probably burn my mouth on this.

Ingredients:

For the dip:

  • 1 pound ground beef 97% lean
  • â…“ cup bacon pieces
  • ½ cup onion, diced
  • 1 clove garlic, chopped
  • 4 ounces cream cheese, room temperature
  • ½ cup sour cream
  • ÂĽ cup mayonnaise
  • ½ cup mozzarella, shredded
  • ½ cup cheddar cheese, shredded
  • 2 tablespoon worcestershire sauce
  • 3 tablespoon ketchup
  • 1 tablespoon of bacon pieces for topping

Bacon Jambalaya

Who doesn’t love a spicy Jambalaya? Add #bacon – done. I think this one will make it to our plate very soon!

Ingredients:

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 1 red pepper, sliced into thin strips
  • 1 jalapeno pepper, chopped
  • 4 garlic cloves, minced
  • 2-3 hot italian sausage, casings removed
  • 4 slices bacon, chopped
  • 8 chicken thighs, de-boned and chopped
  • 1 tablespoon hot sauce (i used tobasco red)
  • 1 tablespoon cayenne pepper (optional)
  • 2 (14 1/2 ounce) cans stewed tomatoes (del monte cajun-style)
  • 1 (12 ounce) bottle beer (heineken)
  • 3/4 lb shrimp, deveined
  • 3/4 lb bay scallop
  • 1 (10 ounce) bag frozen okra
  • 2 cups raw rice

California Roll Breakfast Sushi

Sushi for breakfast? Why not Minot (North Dakota). I guess this is what they consider sushi on the farm. I have to admit – I would almost prefer this breakfast sushi over regular stuff. Yumm!

Ingredients:

    • 4 eggs, divided
    • 6 tablespoons milk, divided
    • 4 tablespoons jack cheese, divided
    • cooking spray
    • 2 flour tortillas (I used carb balance wheat tortillas)
    • 4 strips crisp bacon
    • 1/2 large avocado, sliced
    • 1/2 large tomato, sliced
For the Spicy Sour Cream:
  • 2 tablespoons sour cream
  • 1 tablespoon sriracha (or other hot sauce)
  • 1 teaspoon milk
