Instructions

Remove cinnamon rolls from can. Depending on the brand, the dough may need to be cut to allow for bacon inside the cinnamon roll; for more “traditional” rolls, simply unravel the dough and re-form with a strip of bacon.

Place bacon-wrapped rolls on a pan, as directed on the cinnamon roll packaging, and bake as instructed, if not a little longer (again, raw meat here). Remove and coat with icing. Eat quickly to avoid having to share.

Step 1:

Step 2: Add Bacon (see previous post on No Name Bacon). I did this a bit differently from the ‘original’ recipe. Instead of cutting up the bacon into little pieces, I tore the bacon into bigger chunks.  I figured, instead of little tiny hints of bacon, you’d taste a full chunk within the cookie.

Step 3: Eat the Awesomeness!

Mine was made with Daily’s Bacon (nice and smoky), Ghirardelli’s semisweet chocolate bars, and Jim Beam (because I’m infusing all of my Maker’s Mark so there was none of the good stuff left to cook with).

Fudgy. Smoky. Sweet. Savory. Everything you’d want in a bacon dessert!

I can only imagine it gets better topped by a brown butter or a stout ice cream. Yummmm…..

CUPCAKE INGREDIENTS:
12 slices thick Bacon
2-1/2 cups Cake Flour (can substitute with all-purpose or wheat flour, if desired)
2 teaspoons Baking Powder
1 teaspoon Baking Soda
1 teaspoon Sea Salt
1 teaspoon ground Ginger
1 stick unsalted Butter, softened
3/4 cup Dark Brown Sugar
2 large Eggs
1-1/4 cups pure Maple Syrup
1 Tbsp. Vanilla Extract
1/2 cup Buttermilk (shake well)
3/4 cup Walnuts, finely chopped
