The Sticky Pig: Candied Bacon Confections

Candied bacon?!? Who dreamed up this stuff?!? You asked.

Tara Simon did. And the bacon loving world is a better place for it.

You might have seen Tara and The Sticky Pig Candied Bacon Confections on “Outrageous Food” on the Food Network.  With flavors like S’mores (Graham cracker crusted candied bacon filled with chocolate and hazelnut butter and topped chocolate, a tiny marshmallow and dusted with graham cracker crumbs) and Chocolate Peanut Butter Pretzel (chocolate, peanut butter and pretzels, then hand dip each piece in more chocolate and top with pretzel “dust” and our very own peanut butter drizzle), these sweet and savory nuggets are to die for. I mean, COME ON! How yummy do they sound?

As a friend, naturally, when I was invited to contribute to BaconScotch, I thought of Tara.  Tara metamorphosed her love of food into a successful candied bacon enterprise complete with her own original, one-of-a-kind candied bacon creations.  The Sticky Pig’s candied bacon confections are made in house in Orange County, California, right when you order to ensure quality and freshness. Each piece is made by hand by Tara herself and baked with love with the best possible ingredients she can find, including organic ingredients and make things from scratch when she can.

With the Bacon Vixen as a friend, I have had the benefits of tasting some of her products over the years.

To find out more about Tara and her creations, I sat her down for a quick interview.

OakMonster: I’m sure you get this a lot. What inspired/possessed you to make bacon candies?

Tara: Back in maybe 2004 I had my first bite of candied bacon and I was hooked! Never had I experienced the awesomeness of sweet and salty, like bacon baked with brown sugar and cayenne pepper. I began making it for parties and family gatherings and watched in amazement how quickly my bacon was consumed. Everyone went bonkers and I was always the hit at any party. I’m pretty good with pairing flavors, so I decided to give a few a try, like curry, and then I started filling the candied pieces to create the candies that I sell now on my website.

Where do you find inspiration for new flavor combination?

Everywhere from reading dessert and cocktail menus when I’m out to keeping up with the dessert and chocolate industry, and by tasting whatever I can get my hands on.

Which one of your creations is your personal favorite?

At the moment I am in the works of revamping my entire candied bacon collection, but right now my favorite is The Elvis, which is bacon filled with half banana ganache and half spicy peanut butter ganache with toffee crunch and covered in milk chocolate and topped with banana chips.

The Elvis is my favorite too!  (Followed by S’mores.)  Finally, you probably have tasted a lot of bacon in your line of work. Any favorite?

I like my bacon crispy and crunchy and not too thick or smokey, so some of my favorites are Albert’s Organics Sunday Bacon and Farmland bacon.

Caramel Apple Surprise by Madison Chocolatiers West

We’ve been on a bit of a tear with all the goodies that Madison Chocolatiers West have sent us.  Below is a guest post from our esteemed contributor Big Red.

Not the Caramel Apple of Your Childhood

Let me first preface this by saying that the first job I ever had was working on an apple orchard. I’ve probably eaten every man-made apple concoction, including caramel apples, so I’m a pro, right? Well, I was until the other night when a friend introduced us to this behemoth of deliciousness and I was quite rightly put in my place. Ladies and gentlemen let my introduce a bacon-infused caramel apple, coated not only with caramel but creamy peanut butter and chocolate mixed with perfectly fried bacon bits. Now the average eater might consider running away from such a monstrosity. However, fear not my fellow feasters, these flavors were so finely crafted and blended by chefs at Madison Chocolatiers West (MCW) that even your youngsters would be begging for more.

 

 

 

 

 

 

 

 

 

The only concern I have is with regards to packaging. Cellophane wrapping is all fine and dandy but double-knotted ribbons are not, especially when they are the only thing standing between you, your four other friends and death, errr, I mean dessert. Buuuuuut, fast forward 30 minutes.

 

“That’s sick…how good that is” a fellow diner said between what were most definitely collective sighs of contentment, regret, and shortness of breath, and I whole-heartedly concur. As I dove into my friend’s leftovers (yes, I had already inhaled my own piece) I was aware that I was dangerously slipping into a modesty-out-the-window-let’s-pig-out-and-love-every-minute-of-it kind of moment, and yet, I did not care one bit.  With each bite my mouth readily welcomed this power-packed flavor. It was like my teeth were mini drills happily chugging away through each layer: the crisp squirt of Grannysmith apple followed by a warm hug of caramel, a mouthwatering (by this point, quite literally) peanut butter explosion and concluding with dark chocolate mixed with what I swear was bacon just out of the frying pan (not possible given that this apple flew all the way from New Jersey and I was sitting in Seattle…but you get the gist).  Now some of you may think, “But bacon and apple?” and I say to you that the bacon does not take center stage: each bite is a perfect balance of salt, sweet, and bacon love. So do me a huge favor: pull up your big boy (or girl) pants and dive in. You are not going to regret this!

International Bacon Day or Bacon Day is an unofficial observance, often celebrated on the Saturday before US Labor Day (the first Monday of September). Some cultures, however, celebrate on 19th of February, while others celebrate the day on the first Saturday in January after the new year.

Bacon day celebrations typically include social gatherings during which participants create and consume dishes containing bacon, including bacon-themed breakfasts, lunches, dinners, desserts, and drinks. Bacon Day gatherings may also include the consumption of soy bacon or turkey bacon.

Bacon Day was conceived in 2004 by a group of CU Boulder (Colorado) graduate students. Bacon Day in Manchester UK is celebrated by several students on the 14th January, prior to January examinations as a distraction from revision. Bucknell students are also known for their bacon day celebrations, calling themselves “Meatheads”, and gorging on as much bacon as possible.

We’ve already established, over pages and pages of links, reviews and anecdotes here at baconscotch.com that bacon makes just about everything better. Well, the interweb is no exception! I was recently reminded of this link to bacolicio.us. This clever script will add a giant, crispy slice of bacon to any website of your choosing when you view it. Your vegan cousin’s facebook page? Bacon it! Your local police department’s web page? Bacon it!! The possibilities are endless!
