Bacon Coffin

So those mad geniuses at Bacon Salt have done it again. They have come up with a fo’ realz bacon coffin that is on sale in their online store for the paltry sum of $2999.00.

“This genuine bacon casket is made of 18 Gauge Gasketed Steel with Premium Bacon Exterior/Interior, and includes a Memorial and Record Tube, Adjustable Bed and Mattress and Stationary and Swingbar handles. It also includes a bacon air freshener for when you get that buried-underground, not-so-fresh feeling.”

And you better believe that I’m serious as a bacon-induced heart attack when I tell you that had my tax return been big enough, I would have bought one and converted it into a couch for my man cave. I guess it’ll have to wait for now.

MOM’S FAMOUS KIMCHI AND BACON FRIED RICE

This is one of my personal favorites – and very dear to my heart. ; ) Perfect for breakfast, lunch or dinner. You much try this recipe!

Kimchee Bacon Fried Rice

  • 4 cups of cooked rice (it’s best to use rice that’s at least a day old – the rice is drier and can absorb more flavor)
  • 1 medium onion, diced
  • 1 cup kimchee, chopped
  • 4 eggs, lightly beaten (add some salt and pepper if desired)
  • 8 slices of bacon, diced
  • 1 cup snap peas
  • 2 medium carrots, diced
  • 2 Tbsp. soy sauce (I used the light version; difficult to tell the taste difference)
  • Optional: 2 Tbsp. Gochuchang (red pepper paste), can also sub sriracha for some added spice
  • Oil (I like to use olive oil)

Bacon-Wrapped Hot Dogs with Avocado

 

INGREDIENTS

  1. 6 hot dogs
  2. 6 slices of bacon
  3. 2 tablespoons vegetable oil
  4. 6 hot dog buns, split and warmed
  5. 1 Hass avocado, cut into 12 slices
  6. 1/4 cup plus 2 tablespoons sour cream
  7. 1/4 cup plus 2 tablespoons spicy salsa

DIRECTIONS

  1. Pat the hot dogs and bacon dry with paper towels. Wrap each hot dog with a slice of bacon in a spiral; secure the bacon at each end with a toothpick.
  2. In a large skillet, heat the vegetable oil until shimmering. Add the hot dogs and cook over moderate heat, turning, until the bacon is crisp, about 5 minutes. Transfer the hot dogs to paper towels to drain. Discard the toothpicks.
  3. Tuck the hot dogs in the buns. Top with the sliced avocado, sour cream and salsa and serve.
