ABC Melt – Great Lunch Idea

Hi,
I came across this recipe and thought – wow – quick, easy, nice blend of flavors and I bet kids would like it too.
Ingredients
- 2 English muffins, split and toasted
- 2 teaspoons prepared mustard
- 4 slices Canadian bacon
- 1 medium apple, thinly sliced
- 4 slices Swiss cheese
Directions
- Place muffin halves, cut side up, on an ungreased baking sheet. Spread with mustard; layer with Canadian bacon, apple slices and cheese. Bake at 350° for 5-6 minutes or until cheese is melted. Yield: 2 servings.
I think a spicy or Dijon mustard would work well also. Thanks Taste of Home for the great lunch idea.
Apple, Bacon and Egg Bake – Breakfast for Two

I came across this simple-to-do breakfast recipe for two… sounds and looks pretty yummy.

Ingredients
- 3 eggs
- 1 small apple, diced
- 1/3 cup sour cream
- 1/3 cup shredded cheddar cheese, divided
- 3/4 cup frozen O’Brien potatoes, thawed
- 1/3 cup 2% milk
- 3 bacon strips, cooked and crumbled, divided
- Dash salt and pepper
Directions
- In a small bowl, beat the eggs. Stir in the apple, hash browns, milk, sour cream, 3 tablespoons cheese, 1 tablespoon bacon, salt and pepper.
- Pour into two 2-cup baking dishes coated with cooking spray. Sprinkle with remaining cheese and bacon.
- Bake, uncovered, at 350° for 30-35 minutes or until a knife inserted near the center comes out clean.
