ABC Melt – Great Lunch Idea

Hi,

I came across this recipe and thought – wow – quick, easy, nice blend of flavors and I bet kids would like it too.

Ingredients

  • 2 English muffins, split and toasted
  • 2 teaspoons prepared mustard
  • 4 slices Canadian bacon
  • 1 medium apple, thinly sliced
  • 4 slices Swiss cheese

Directions

  • Place muffin halves, cut side up, on an ungreased baking sheet. Spread with mustard; layer with Canadian bacon, apple slices and cheese. Bake at 350° for 5-6 minutes or until cheese is melted. Yield: 2 servings.
I think a spicy or Dijon mustard would work well also. Thanks Taste of Home for the great lunch idea.

Ingredients

  • 3 eggs
  • 1 small apple, diced
  • 1/3 cup sour cream
  • 1/3 cup shredded cheddar cheese, divided
  • 3/4 cup frozen O’Brien potatoes, thawed
  • 1/3 cup 2% milk
  • 3 bacon strips, cooked and crumbled, divided
  • Dash salt and pepper

Directions

  • In a small bowl, beat the eggs. Stir in the apple, hash browns, milk, sour cream, 3 tablespoons cheese, 1 tablespoon bacon, salt and pepper.
  • Pour into two 2-cup baking dishes coated with cooking spray. Sprinkle with remaining cheese and bacon.
  • Bake, uncovered, at 350° for 30-35 minutes or until a knife inserted near the center comes out clean.
