Cheesy Bacon Bruschetta recipe

what you need

2  slices OSCAR MAYER Super Thick Cut Applewood Smoked Bacon, cut into 1/2-inch pieces
4  slices French bread, 3/4 inch thick
1  tsp. KRAFT Mayo with Olive Oil Reduced Fat Mayonnaise
1  clove garlic, halved
4  KRAFT Extra Thin Swiss Cheese Slices, halved
1  plum tomato, seeded, chopped

make it

HEAT broiler.

COOK and stir bacon in skillet on medium heat 12 min. or until browned. Remove from skillet with slotted spoon; drain on paper towels.

SPREAD bread with mayo. Broil, 4 inches from heat, 1 to 2 min. or until toasted; rub with garlic.

COVER toast slices with 4 cheese pieces, bacon and tomatoes. Top with remaining cheese pieces; broil 1 min. or until melted.

SUBSTITUTE
If you don’t have a fresh garlic clove, sprinkle toasted bread slices lightly with garlic powder before topping with cheese, bacon and tomatoes. Broil as directed.
SERVING SUGGESTION
Prepare recipe as directed. Add to hot filled bowls of French onion soup

Four Cheese & Bacon Jalapeños

Are you having a Super Bowl party? Or maybe friends over for the playoff games? This recipes just sounds and looks absolutely yummy!

INGREDIENTS

  • 2 tsp. kosher salt, divided
  • 3 large eggs
  • 2 cups plain fine dry breadcrumbs
  • 3 tsp. dried oregano
  • 4 cups vegetable oil

DIRECTIONS

  • Wear gloves to protect fingers! Make cut under half of stem lengthwise on one side of peppers forming a “T.” Pry open; remove seeds using tip of a paring knife and kitchen shears.
  • Stir together bacon, cheeses, hot sauce, pepper and 1 tsp. salt.
  • Fill jalapeños with cheese mixture, pressing seams closed after filling, so that cheese is compacted and chili retains its shape.
  • Lightly beat eggs in a small shallow bowl. Stir together breadcrumbs, oregano and 1 tsp. salt in another shallow bowl.
  • Dip jalapeños in egg, letting excess drip off, then coat with breadcrumbs, transferring to a work surface. Repeat coating with egg and crumbs to form a second layer.
  • Heat 2 inches of oil to 325°F in a medium saucepan. Fry 4 jalapeños until golden brown all over, 5 to 6 minutes. Transfer to several layers of paper towels to drain. Repeat twice, heating oil to 325°F between each batch.

Bacon, Avocado and Tomato Club

Bacon and avocado together – yum! This is a bit different as it can be served as an appetizer. Here is great recipe from the Avocado Commission:

Ingredients:

  • Baguette Croutons (recipe follows)
  • 2 ½ each Fresh California Avocados*
  • ½ tsp. lemon juice, fresh
  • 4 slices crisp cooked bacon, cut into thin strips
  • 1 cup micro sprouts or micro greens
  • Roasted Cherry Tomatoes (recipe follows)
  • ¼ cup basil pesto, thin consistency
  • Baguette Croutons (Yield: 24 each)

  • 24 thin slices of 2″ diameter baguette
  • melted butter, as needed
  • Roasted Cherry Tomatoes (Yield: 1 batch)

  • 2 cups cherry tomatoes, cut in half
  • 1 Tbsp. olive oil
  • Lemon Aioli (Yield: 1/2 cup)

  • ½ cup mayonnaise
  • 1 tsp.lemon juice, fresh

Instructions

Baguette Croutons:

  1. Brush one side of the baguette slices with melted butter.
  2. Bake at 375 degrees F until lightly toasted, about 15 minutes.  Cool.

Roasted Cherry Tomatoes:

  1. Slice tomatoes in half and toss with olive oil.
  2. Roast at 400 degrees F until lightly browned, about 15 – 20 minutes.  Cool.

Lemon Aioli:

  1. Mix together mayonnaise and fresh lemon juice.

Bacon Avocado and Tomato Club:

  1. Coarsely mash the avocado and mix it with the fresh lemon juice.
  2. Top each crouton with 1 Tbsp. of the mashed avocado mixture.
  3. Top with 2 thin strips of bacon, micro sprouts, lemon aioli and roasted cherry tomatoes.
  4. Drizzle with pesto.  Serve immediately.
  5. Servings of 2 each

*Large avocados are recommended for this recipe.  A large avocado averages about 8 ounces.  If using smaller or larger size avocados adjust the quantity accordingly.

Holiday Bacon Appetizers

Looking for a bacon appetizer to serve over the holiday season! Here you go… from the Pioneer Woman, Ree.

Ingredients

  • 1 package Club Crackers
  • 1 pound Thin Sliced Bacon (or More Depending On Number Of Crackers)
  • Grated Parmesan Cheese
  • Optional Alternative: Brown Sugar Instead Of Parmesan Cheese

Preparation Instructions

Lay crackers (as many as you want) face up on a cookie sheet.

Scoop about 1 teaspoon of grated Parmesan cheese onto each cracker. Cut your package of bacon in half (or cut pieces individually) and carefully, so the cheese doesn’t fall off, wrap each cheese covered cracker in one half piece of bacon, completely covering the cracker. It should fit snugly around the cracker.

Place the bacon wrapped crackers onto a baking sheet that has a rack on it.

Place in a 250-degree oven for about 2 hours.
